Hi, Littlefinders! Today I am bringing you a different type of post by sharing one of my all-time favorite foods. Mole sauce. If you have not heard about this delicious sauce, I will start by saying this is a huge part of my culture. As some of you may know, I grew up in Mexico City, and Mole is extremely popular. For those of you who are not familiar with it, Mole sauce is made with Chile peppers, soybeans, oil, crackers, sugar, sesame seeds, peanuts, salt, and even cocoa. Yes, chocolate! You can make tons of dishes with them, and Doña Maria’s ready to serve Mole, makes it so much easier to prepare.
Since I am always on the go, I try to find easy dishes that can easily be incorporated with Mole. This time I decided to make some delicious cheese and Mole quesadillas. All you need is the following:
And of course Doña Maria Mole. You can find this at the Latin foods supermarket or in the ethnic foods section.
I first take my Mole Sauce and heat it up for 3 minutes. It will be pretty hot, but it gives me enough time to make my Quesadilla. When I am on the go, I simply take a whole wheat tortilla and add plenty of mozzarella cheese. I put it in the microwave for 1 minute and the cheese is nice and melted. If you have a little bit more time, you can use a flat pan for a crispier finish.
I love cheese quesadillas because they make great lunch, dinners, and even appetizers. Part of the Mexican culture is entertaining, and nothing brings people together like Mole sauce. Once your cheese is melted, It’s time to add Mole! For more flavor, I add more cheese on top of the Mole Sauce,
Sour Cream with some paprika added into it, it’s also a must. Yum Yum Yum. The best part is, if you want to take these for lunch or eat them the next day, just keep all the ingredients separated and everything will taste super fresh. Finally, top your Quesadilla with a little bit of Mole.
